Caramelle are stuffed pastas, shaped like sweets whose plastic wrappers are twisted at both ends, and they are the one candy better in its wrapping. Our filling is made by slowly roasting cauliflower in butter until it begins to froth and turn brown. We then purée until smooth before filling the pasta.
