Lamb shank, Broccoli rabe, Whey
At Nardello’s Fresh Pasta, we make a lot of ricotta. A byproduct of cheese making is whey and we have been determined to find a use for this flavorful liquid. Our fettuccine with whey braised lamb shank is the perfect solution. This dish starts with beautiful lamb shanks that are braised until they become so tender the meat falls right off the bone. After the braising process, we are left with a flavorful whey/lamb stock that will later be used to glaze the pasta. Sautéed broccoli rabe and Parmesan round out the dish with nice bitter and salty notes.
